Bed rest ;(

Well, I'm now on bed rest starting today for the next 10 days. It all started last night when I was sitting down and moved and felt a sharp pain on my right side of my stomach. I wasn't sure what it was so I called my aunt who is a nurse since all the doctor offices here were closed and I didn't want to go to the ER. This morning the pain was still there and was a little worse, so I called my doctors office to see what was going on. They sent me to labor and delivery. While there they took a urine sample and did some blood tests checking for kidney infections or any sort of infection. They monitored the baby to make sure I wasn't contracting and make sure the baby was alright. My little girl is doing great! Me, I have a super bad sprained/pulled ligament on my right side. I'm not allowed to work, work out, lift anything, pretty much can't do anything for the next 10 days but sit or lay down. If it doesn't get any better in the next 10 days, I'm going to be out on permanent bed rest until the baby comes. Hopefully it gets better ASAP!

Dessert! :)

Made my VERY FIRST homemade cheesecake EVER!!! I was so proud of myself! Tim didnt help me at all, (which he usually helps with every meal or dessert we make). It was super easy and SOOO delicious! I had to share the recipe with everyone!!!

Chocolate Turtle Cheesecake
24 chocolate sandwich cookies, ground (about 2 3/4 cups), (I used an already made oreo pie crust, tasted just as good.)
2 tablespoons butter, melted
2 packages (8 ounces each) cream cheese, softened
1/3 cup sugar
1/4 cup sour cream
2 eggs
1 teaspoon vanilla
1/2 cup prepared caramel sauce
1/2 cup prepared fudge sauce
1/2 cup pecan halves

1. Preheat oven to 350 degrees F. (If making own crust) Combine ground cookies and butter in medium bowl; pat evenly on bottom and 1 inch up side of 9-inch springform pan. Place in freezer while preparing filling.

2. Beat cream cheese in large bowl with electric mixer until fluffy. Beat in sugar, sour cream, eggs and vanilla until smooth. Pour mixture into prepared crust.

3. Bake cheesecake 30 to 35 minutes or until almost set in center. Cool on wire rack. Refrigerate, loosely cover, 8 hours or overnight.

4. Remove side of springform pan from cheesecake; place on serving plate. Drizzle caramel and fudge sauces over cake; cut cake into wedges. Top each serving with 2 to 3 pecan halves.

Recipe :)

Well....I made dinner last night and its really sad to say....but 6 months of marriage and this was the first one Tim actually LOVED!!!!! Thought I would share the recipe with all of you since it really was a delicious dinner and would recommend it to anyone!

Pork Chops in Creamy Garlic Sauce
1 cup fat-free reduced-sodium chicken broth
1/4 cloves garlic, peeled and crushed (I just used already minced garlic in the can)
1/2 teaspoon olive oil
4 boneless pork loin chops, about 1/4 inch thick each
1 tablespoon minced fresh parsley
1/2 teaspoon tarragon (i couldnt find it so I replaced this and the dry sherry with Italian seasoning)
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons water
1 tablespoon all-purpose flour
1 tablespoon dry sherry
2 cups cooked white rice

1. Place broth and garlic in small saucepan, Bring to a boil over high heat. Cover; reduce heat to low. Simmer 25 to 30 minutes or until garlic mashes easily with fork. Set aside to cool. Puree in blender or food processor until smooth.

2. Heat olive oil in large nonstick skillet over medium-high heat. Add pork; cook 1 to 1 1/2 minutes on each side or until browned. Pour garlic puree into skillet. Sprinkle with parsley, tarragon, salt and pepper. Bring to a boil; cover. Reduce heat to low; simmer 10 to 15 minutes or until pork is juicy and barely pink in center. Remove pork from skillet; keep warm.

3. Combine water and flour in small cup. Slowly pour flour mixture into skillet; bring to a boil. Cook and still until mixture thickens. Stir in sherry. Pour sauce over pork and rice. Garnish as desired.
                                        Makes 4 servings

Well, I hope you all enjoy this delicious meal if you try it! :)

21st Birthday!

Today is my 21st birthday! I thought turning 21 would be a lot more fun or cooler than it really is. This past weekend my mom, bailee, grandma huber, and nephew hunter came up for the day on Sunday to spend it with me for my birthday. They brought me presents and new clothes that actually fit me! My mom took me and Tim and everyone else out to Wingers for my birthday dinner. It was a lot of fun being able to spend time with some of my family out here in Vernal. I was happy they came out and celebrated my birthday with me since I had to work today and spending the evening alone since Tim is working. I've had a really nice birthday and appreciate all the birthday wishes from everyone on facebook, texting me, and in person. Its been a great day!!

New car!!!!! :)

Tim and I just bought a new car today!!!! I am so excited! We have been talking about getting a new car when the baby comes so we have something bigger to travel in with the baby and Max. A kid I work with posted saying he was selling his car. As soon as I saw that I told Tim and he agreed we could get it! We immediately put my old car on KSL and Tim went to the bank and got a loan to buy the new car. We got a 2008 Jeep Commander. I am so excited and relieved that we were able to find a car for a good price finally!
Our new car! :)

Wisconsin Trip

Recently Tim and I went to Wisconsin to visit his family and for our new niece and nephews baby blessings. It was so much fun seeing everyone and meeting Andrew and Peyton for the first time. We left August 29 and drove straight through....it took us 26 hours to get there. It was a fun and boring drive. When we got there we just relaxed and watched some TV with the family. Friday, we got to meet our niece and nephew. Eric and Jamie came over with Peyton then we went on a walk with them and Sarah and Andrew. It was a lot of fun seeing the park and Huntington Beach with the fall leaves. Saturday we went to the Zoo with the whole family. We saw jellyfish, kangaroos, tigers, bears, lions, cows, hippos, seals, and many more awesome animals. After 6 hours at the Zoo (it was a very, very big zoo) we went back home and took a nap and just watched movies and relaxed at home. Sunday, we got up early for Andrew's baby blessing and then drove about an hour to Milwaukee to Peyton's blessing. Tim was so happy he was able to stand in the circle and be there for both the blessings. After we went home and ate some delicious dinner and played games. Monday, Tim and his brothers went golfing, while I stayed back at home and did pedicures with my mother-in-law and sister-in-law Carolyn. Later that day we went to Huntington Beach for a bonfire/BBQ. Finally Tuesday came and it was time to go home. We waited until everyone was home from work and school so we could say bye to everyone. That night we stayed in Des Moines, IA hoping if we got a good nights rest we could make it back without stopping.....we were wrong. We made it to Sidney, Nebraska and finally decided after talking about it for 30 mins that we needed to spend the night in Laramie, WY. I called my work and explained to them the situation and they were fine with it. Then Thursday morning got up and left for a 6 hour drive back home....when we got home I had to go into work and help close. LONGEST day EVER! SO glad we were able to go to Wisconsin and glad I was able to spend time with my in laws and get to know everyone much better. It was a fun time and cant wait to go back for Christmas.
