30 weeks!

I know I'm not doing a very good job at keeping up on my blog. But I just want to share the excitement I have right now that I only have 10 weeks left! I know it's still a ways away, but it seems like time has gone by so fast and I don't feel ready or prepared at all for baby McKinlee to
come! Some days I wish she was here already but other days I'm glad I still have time to get everything ready! Hoping the next 10 weeks go by fast!

Forgiveness

I recently have just finished reading the book "Let It Go" By Chris Williams. It was such an inspiring story and got me thinking about a lot of things in my life and things I have gone through. The book is his story of how him and his family got hit by a teenage drunk driver and his wife, unborn child, and two of his four children were killed instantly and how he forgave the teenage driver immediately. Me, personally, I dont think I would be able to forgive someone so quickly as he did if I had gone through something like that. I guess we are all giving different trials for different reasons. Here is the link to the youtube video about his story: http://youtu.be/E7zwQ_7q-fU I recommend watching this and reading his book, if you havent already. It may just help you like it has helped me!

I just want to finish saying how thankful I am for my husband and all he does for me and our future and our soon to be baby! He is the most amazing thing that has happened to me! Couldnt ask for a better husband! And i'm also grateful for the many trials I have gone through my life to help me get to where I am today.

Mary Kay!

Saturday I had a Mary Kay party with a few friends out here in Vernal. My Mary Kay consultant, Tammy, drove all the way out here from Herriman. I was so happy to finally get "pammered" during this pregnancy! Tammy did an amazing job at her job showing the products and giving us awesome facials! Because I have such an amazing consultant and after talking to Tim, I have decided to start my own little Mary Kay business and sell the product and do parties! I will be getting my kit soon and having my first party in December! I cant wait to see how this goes and have an opportunity to make a little extra cash and help others out as well. I know its going to be a challange but I am ready for this awesome opportunity to start my own business. And hey, if it works out I can be a stay at home mom and finish my schooling without any problems! :) So, if you want some Mary Kay product or want to do a party let me know and I will help you out! :)

Bed rest ;(

Well, I'm now on bed rest starting today for the next 10 days. It all started last night when I was sitting down and moved and felt a sharp pain on my right side of my stomach. I wasn't sure what it was so I called my aunt who is a nurse since all the doctor offices here were closed and I didn't want to go to the ER. This morning the pain was still there and was a little worse, so I called my doctors office to see what was going on. They sent me to labor and delivery. While there they took a urine sample and did some blood tests checking for kidney infections or any sort of infection. They monitored the baby to make sure I wasn't contracting and make sure the baby was alright. My little girl is doing great! Me, I have a super bad sprained/pulled ligament on my right side. I'm not allowed to work, work out, lift anything, pretty much can't do anything for the next 10 days but sit or lay down. If it doesn't get any better in the next 10 days, I'm going to be out on permanent bed rest until the baby comes. Hopefully it gets better ASAP!

Dessert! :)

Made my VERY FIRST homemade cheesecake EVER!!! I was so proud of myself! Tim didnt help me at all, (which he usually helps with every meal or dessert we make). It was super easy and SOOO delicious! I had to share the recipe with everyone!!!

Chocolate Turtle Cheesecake
24 chocolate sandwich cookies, ground (about 2 3/4 cups), (I used an already made oreo pie crust, tasted just as good.)
2 tablespoons butter, melted
2 packages (8 ounces each) cream cheese, softened
1/3 cup sugar
1/4 cup sour cream
2 eggs
1 teaspoon vanilla
1/2 cup prepared caramel sauce
1/2 cup prepared fudge sauce
1/2 cup pecan halves

1. Preheat oven to 350 degrees F. (If making own crust) Combine ground cookies and butter in medium bowl; pat evenly on bottom and 1 inch up side of 9-inch springform pan. Place in freezer while preparing filling.

2. Beat cream cheese in large bowl with electric mixer until fluffy. Beat in sugar, sour cream, eggs and vanilla until smooth. Pour mixture into prepared crust.

3. Bake cheesecake 30 to 35 minutes or until almost set in center. Cool on wire rack. Refrigerate, loosely cover, 8 hours or overnight.

4. Remove side of springform pan from cheesecake; place on serving plate. Drizzle caramel and fudge sauces over cake; cut cake into wedges. Top each serving with 2 to 3 pecan halves.

Recipe :)

Well....I made dinner last night and its really sad to say....but 6 months of marriage and this was the first one Tim actually LOVED!!!!! Thought I would share the recipe with all of you since it really was a delicious dinner and would recommend it to anyone!

Pork Chops in Creamy Garlic Sauce
1 cup fat-free reduced-sodium chicken broth
1/4 cloves garlic, peeled and crushed (I just used already minced garlic in the can)
1/2 teaspoon olive oil
4 boneless pork loin chops, about 1/4 inch thick each
1 tablespoon minced fresh parsley
1/2 teaspoon tarragon (i couldnt find it so I replaced this and the dry sherry with Italian seasoning)
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons water
1 tablespoon all-purpose flour
1 tablespoon dry sherry
2 cups cooked white rice

1. Place broth and garlic in small saucepan, Bring to a boil over high heat. Cover; reduce heat to low. Simmer 25 to 30 minutes or until garlic mashes easily with fork. Set aside to cool. Puree in blender or food processor until smooth.

2. Heat olive oil in large nonstick skillet over medium-high heat. Add pork; cook 1 to 1 1/2 minutes on each side or until browned. Pour garlic puree into skillet. Sprinkle with parsley, tarragon, salt and pepper. Bring to a boil; cover. Reduce heat to low; simmer 10 to 15 minutes or until pork is juicy and barely pink in center. Remove pork from skillet; keep warm.

3. Combine water and flour in small cup. Slowly pour flour mixture into skillet; bring to a boil. Cook and still until mixture thickens. Stir in sherry. Pour sauce over pork and rice. Garnish as desired.
                                        Makes 4 servings

Well, I hope you all enjoy this delicious meal if you try it! :)
